- 500 ml lukewarm water
- 500 grams of gluten-free flour
- 1 teaspoon of sugar
- ½ teaspoon of salt
- 20 grams of fresh yeast (or a package of dry least),
- olive oil.
Dissolve the yeast in some water with a teaspoon of sugar and a tablespoon of flour. Wait for 10 minutes than mix all the ingredients together. Gluten-free bread behaves differently than regular bread and the dough should be softer (somewhat between the dough and the cake batter). When you combine all the ingredients (thorough kneading is not necessary), place the dough in a baking pan and smoothen the surface with wet spatula. Let the dough rise once (cca 45 minutes) and bake it in a charcoal pizza oven at 200 degrees Celsius for 35-40 minutes. Remove it from the oven and let it cool.
